What is a grease trap? Grease traps have existed for more than 100 years and are also known as grease interceptors, grease converters, grease collectors, grease recovery or management devices, or grease traps. They are used in a variety of settings, including restaurants, cafs, snack bars, pubs, bars and inns, hotels, schools and colleges, and bakeries. Simply put, a grease trap is a container through which wastewater containing grease flows before entering a wastewater system. The container is designed to intercept or capture the grease while allowing clear water to pass through. Grease traps operate on the principle that animal fats and vegetable oils have a density 10 to 15 percent lower than water and that grease does not mix with water. The grease rises inside the interceptor and is captured by a baffle system. Solids settle at the bottom, while the separated clear water exits beneath an outlet baffle. Many grease traps also have screens for capturing solid residue, reducing the amount of solids that settle at the bottom of the interceptor. Over time, solids and grease accumulate. If they build up for long enough, they may begin to escape through the outlet and, under certain circumstances, may back up through the inlet.
